Our Executive Chef
Born and Raised in the heart of Cajun country, Opelousas, Louisiana, home of the Yam capital of the world, Executive Chef Patrick Knight grew up in a family and culture centered on great food, good times and unique ingredients. I guess you could say he cut his teeth under mama’s apron and began cooking at the age of 8 years old. Patrick would wake up on Saturday and Sunday mornings and make breakfast for his family. During his teenage years he always felt a passion for food and creative cooking, and his artistic ways just seemed to come natural to him. Through all the family gatherings with good friends and great food, Patrick learned quickly that food was his way of sharing happiness.
Patrick left home at 18 and moved to Atlanta to take a job as a line cook in a local Italian Restaurant; He spent 8 years working his way up the ranks and learning many styles and methods of cooking. Realizing that there was still a lot more to learn in the culinary field, he began working for the Marriott Corporation where Patrick really started to learn the art, science and diversity of the culinary arts. Patrick spent nine (9) years working under six (6) very phenomenal and accomplished chefs, learning tricks and techniques that would mold him into the chef that he is today.
Patrick left Marriott and began follow his entrepreneur callings by forming a small spice company, Knight Spice LLC. While nurturing his small spice startup, he was working with a local butcher shop as their Corporate Chef. With this new spice venture Patrick had a great opportunity to really hone his spice blends and mixes creating exciting new flavors for signature dishes to come. Working with small independent restaurants and local butcher shops, he found his small niche in the spice market place. His love for food and his desire and passion for spice and flavor have only enhanced and characterized some of his signature dishes and spice blends.
Patrick joined us at Lil’ River Grill May 1st 2007, and his debut menu as the Executive Chef was introduced to our guests along with great fan fare in July of 2007. We are extremely proud of this menu and feel that it offers our guests a unique and exceptional dining experience! With fresh and new ideas, creative dishes, friends and colleagues, Patrick looks forward to sharing his many wonderful creations with all of our guests.
